Divide puffcorn In a saucepan melt butter add karo and brown sugar stir until dissolved. Bring to boil and boil for 2 minutes. Remove from heat and add soda. Pour over puffcorn bake @ 350 degrees for 12 minutes stir and repeat 2x's. Pour on wax paper until cool. store in a sealed package.

1. Line an 8-inch (20 cm) square pan across the bottom and up the sides with two sheets of aluminum foil, making a big criss-cross with the sides overhanging. 2. Preheat the oven to 325F (160C) and position the rack in the center of the oven. 3. In a large bowl, toss together the flour, baking powder, baking soda, and salt. Add the brown sugar, walnuts, dates, and apricots. Use your fingers to mix the fruit, separate any pieces sticking together. 4. Beat the egg and vanilla in a small bowl, then mix it with the fruit and nut mixture until everything's coated with the batter. Spread the mixture in the baking pan and press gently to even it out. 5. Bake for 35-40 minutes until the top of the bars are golden brown and has pulled away just-slightly from the sides of the pan. Preheat oven to 325 degrees. Except for dried fruit (i.e. craisins, bananas, raisins, or cherries), mix all ingredients in large bowl. Grease large baking sheet (with sides) with a small amount of canola oil. Spread granola mixture evenly on baking sheet. Cook for approximately 30 minutes until granola starts to turn a nice light brown. Remove from oven and immediately spoon granola back into mixing bowl. (Note: do not let granola start to cool on baking sheet or it will be difficult to remove). Mix-in 1 Cup (or slightly more) of dried fruit of your choice (craisins work really nicely). As granola cools, periodically chop it up and stir to make nice 'crumbles'. Ideas: Great when mixed in with yogurt and fresh berries; also great as a topping for ice cream. To create more of a trail mix snack, add your favorite "mix-in's" to granola (i.e. M&M's, almonds, peanuts, raisins, etc.)

Ingredients 1 ¾ cup sliced almonds ¾ cup Splenda sweetener 2 egg whites 1 1/8 tsp salt 1 tsp vanilla extract Directions 1. In bowl of a food processor, combine 1 ½ cups of the almonds and ¼ cup of Splenda®. Process until mixture is finely blended and set aside. 2. In a large glass bowl, place the egg whites and salt. Beat with an electric mixer until soft peal forms. 3. While mixing slowly; add in remaining Splenda®, 1 tbsp at a time, continuing until mixture is thick and glossy. Beat in vanilla extract and fold in the mixture from the food processor. 4. Line two cookie sheets with aluminum foil (Do not spray with cooking spray). Drop rounded spoonfuls of mixture onto a cookie sheet. 5. Bake at 350 degrees for 10 – 18 minutes or until cookies are light, golden brown. 6. Turn off oven and let sit with door open for 30 minutes. Remove from the oven and allow cookies to cool on pan at room temperature. Peel cookies from foil and serve immediately or store in airtight c
